Merry Christmas...as a New Year Beckons

The song in the video brings beautiful memories of Christmas in Nigeria. The song in Yoruba, speaks of the need for God's protection as the year draws to an end and a new year is almost within reach. Enjoy Christmas and all its goodies. This year I'm serving the usual Naija spread, some British fare, plus roast duck, dodo Ikire, goat and smoked turkey pepper soup. If you're cooking jollof rice, try this tip for that smoky delicious taste - add smoked chicken or turkey stock to your pepper and tomato paste before bringing to a boil. Using the stock also means you won't need as much butter and oil. Poultry stock gives jollof rice that creamy taste with less fat compared to beef or lamb stock. Use only the clear stock and avoid any dark bits.
